Introduction

Ingredients

    8 fresh large basil leaves
    1/2 c. fresh roma tomatoes, chopped
    1/4 c. fat-free shredded mozzarella
    2 egg whites, beaten with a tbsp. water
    1/2 tsp. minced garlic
    1 tsp. vegetable or chicken stock
    1 tsp. aged balsamic vinegar
    Salt & pepper to taste

Directions

In a small, nonstick frying pan, lightly sautee' garlic, tomatoes and basil in 1 tsp. of stock (to substitute for oil). Add beaten egg whites and sprinkle mozzarella on top. When egg begins to bubble, flip it over. Add salt and pepper to taste. Plate and drizzle aged balsamic vinegar on top. Serves 1.
