Ingredients

2 c flour
2 t baking powder
2 c milk
4 eggs - slightly beaten
1 t salt
1 lb scallops
1 1/2 lb imitation crab meat
2 cans deveined shrimp
4 anaheim peppers - roasted, peeled & de-seeded
1 4 oz can diced green chii's
1 T dried cayenne pepper flakes
3/4 lb Mozzarella cheese - shredded
3/4 lb Mild Cheddar cheese - shredded
Directions
Grease 9 x 13 baking dish with butter or cooking spray. Preheat oven to 350 degrees.
Sift dry ingredients together in a separate bowl. Add milk and eggs to dry ingredients and mix thoroughly until smooth. Mix in green chili's and cayenne pepper flakes. Set aside.
Lay Anaheim chili's across bottom of baking dish to cover. Ad a mixed layer of seafood, cover with cheeses. Pour 1/2 batter mixture over these layers. Add another layer of Anaheim chili's, seafood, cheese and batter.
Cover with foil and bake at 350 degrees for 45 minutes. Remove foil and return to oven for another 30 - 45 minutes until firm and golden brown. If edges start to brown significantly then reduce heat to complete cooking.
Remove from oven and let cool for 10 minutes before serving.
Serves 15 - approx 1 1/2 c serving size
