This is a ONCE A MONTH recipe. Homade pizza made easy. You will also need *REDUCED FAT GARLIC ALFREDO SAUCE* and Italian Seasonings of your choice. Many people also like tomato on this type of pizza I don't like tomato so I leave them off. This is a ONCE A MONTH recipe. Homade pizza made easy. Ingredients

    Chicken Breast, no skin, 2 breast, boneless and skinles
    Mozzarella Cheese, part skim milk,
    Parmesan Cheese, grated,
    2 Boboli 16" pizza crust
    Scallions, raw,
    Spinach, fresh,

Directions

Assembly Directions: Place chicken in a zipper top sandwich bag.

Freezing Directions: Seal, label and freeze.
I freeze my Mozerella cheese in the bag it came in and take out the night before I need it.

Serving Directions:Thaw ingredients. Preheat oven to 350 degrees. Grease pizza pans and place crusts on the pans. Divide and spread sauce evenly over pizza crust. Spread chicken, spinach, and onions evenly over the pizza. In a zipper bag, I shake together the cheeses and the Italian seasoning. Then spread evenly on the pizza. Top with cheese mixture. Bake in oven until cheese is melted and bubbly and the crusts are golden brown (approximately 25 minutes).

    Very Good
    I made a similar recipe but without scallions and Parmesan cheese. I added fresh slices of red (sweet) pepper and pine nuts. If I'd had the time, I would've roasted the pine nuts first. Sometimes I use shredded Swiss cheese, but my daughter doesn't like it. I use Perdue Shortcuts chicken. - 7/31/12
