Introduction
This flavorful casserole can be seasoned to your liking by either leaving out the hot sauce and cayenne pepper or by adjusting the amounts to fit your taste buds. If not everyone in your family likes spicy food, the hot sauce can be drizzled on top after it has been cooked. Zesty Mexican Casserole
Ingredients
11/2 cups of crushed baked tortilla chips
1 pound of ground lean turkey
1 cup of canned tomato sauce
1 cup of jarred salsa
1 15½ oz can of black beans, drained
1 15½ oz can of red kidney beans, drained
1 cup of frozen corn kernels, thawed
1 cup of sliced mushrooms
½ cup of sliced black olives
½ cup diced red onion
½ cup diced red pepper
2 tsp red hot sauce, if desired
1 tsp cayenne pepper, if desired
11/2 cups of reduced fat shredded Mexican cheese mix, or cheddar cheese
Reduced-fat sour cream, as a garnish, if desired

Preheat oven to 350 degrees and spray a 13 x 9 inch baking dish with nonstick cooking spray. Heat a nonstick skillet over medium heat and spray with cooking spray. Add the ground turkey to the skillet and cook, stirring often, for about 10 minutes, or until turkey is no longer pink.
In a large mixing bowl, combine the cooked turkey with all of the ingredients except for the shredded cheese. Scatter 1 cup of the crushed chips on the bottom of the baking dish, and then pile ½ of the turkey mixture on top of the chips, then sprinkle 1 cup of the cheese on top of the turkey mixture. Pile the remaining turkey mixture on top of the cheese and then sprinkle the remaining cheese and chips atop the casserole. So you will end up with 2 layers of cheese and 2 layers of turkey.
Bake at 350 degrees for 30 minutes, or until heated throughout. Let stand for 5-10 minutes before serving.
