Introduction

A Weight Watcher's style recipe that I've tweaked a bit. The marinade/salsa is soooo good - that I've been known to double the recipe and use with other meals. Ingredients

    Marinade Ingredients:
    4 tbsp fresh cilantro
    4 tbsp chopped onion
    4 tbsp red bell pepper (or green)
    4 tbsp chopped tomato
    2 tbsp fresh lime juice
    3 tsp olive oil (you can use less)
    3 tsp soy sauce
    dash of ground red pepper
    2 garlic cloves (can use 1)

    2 4oz skinless chicken breasts
    Cooking Spray



Directions

1. Combine marinade ingredients in food processor and process until minced. (I sometimes just mince it all myself and skip the food processor.)
2. Place 3 tbsp of the mixture and the chicken into a small sealable bag and seal. Marinate in refrigerator at least 4 hours - over night is ideal.
3. Place remaining marinade in small bowl; cover and chill.
4. Bring remaining "salsa" to room temperature.
5. Prepare grill or pan with spray oil.
6. Cook chicken until done.
7. Serve remaining salsa with chicken.

    Very Good
    This was really good on the George Foreman; I've made it more than once. It does take a long time rinse and mince the salsa ingredients by hand. Definitely use a food processor. - 7/12/10
