Introduction

Ingredients

1 Eggplant, peeled and cubed
4-6 Zucchini, cubed
1 large onion, diced into large pieces
3 cans of 14.5 oz. Sliced Stewed Tomatoes
4 Tbs. Olive Oil
Salt and black pepper to taste
Dash of Nutmeg (fresh is best)
Dash of marjoram
Dash of Thyme
Dash of Sage
Directions
Preheat oven to 375 degrees F.
After prepping the veggies, mix together with the tomatoes (including the tomato juices) and the olive oil.
Add spices to taste (can add a little more flavor if you taste test half-way through cooking).
Place the veggie mixture in a deep baking dish (I use two casserole dishes side by side.) It will start out as a great volume, but will shrink with cooking.
Bake for 1 hour stirring and testing for flavor after 30 minutes. The veggies should get browned or even a little bit blackened at the top. That will add great flavor!
Makes enough to feed a large dinner party.
