Introduction

A mostly vegetable salad, tossed with tangy Catalina dressing and crunchy Fritos. Yummy! A mostly vegetable salad, tossed with tangy Catalina dressing and crunchy Fritos. Yummy!

Ingredients

    3 to 4 green peppers, diced
    4 stalks, celery, diced
    2 cups grated cheddar cheese
    1 large bottle (16 fl. oz) Catalina Free dressing
    1 can sliced olives
    4 green onions, diced (tops and most of bottom)
    3 to 4 tomatoes, diced (I remove most of seeds)
    2 cans kidney beans, drained
    1 large (15 oz.) package of Fritos

Directions

Combine all ingredients except Fritos. Chill. Prior to serving, add corn chips, or get Big Scoop Fritos and use salad as a dip.

I like to use less dressing than the recipe calls for--I just eyeball it until salad is coated.
