Introduction

I just love these muffins. I just love these muffins.
Number of Servings: 18

Ingredients

    1.5 cups Brown sugar
    2/3 cup Canola oil
    1 Egg
    1 tsp Vanilla
    1 tsp Baking soda
    1 cup Milk
    1 tsp Lemon juice
    1.5 cups Rhubarb
    2.5 cups Flour

Directions

Mix sugar, oil & egg, add vanilla.
Mix milk and lemon juice, add soda.
Combine all together.
Add flour, stirring as you add.
Pour into 18 muffin cups or 2 loaf pans.
Bake at 325*F

Muffins- 30-35 minutes
Loaves- 40-45 minutes
