Introduction

Ingredients

    3/4 c bulgar wheat, dried
    1/2 a medium-sized cucumber, peeled and chopped
    1/4 c chopped fresh scallions
    1/4 c toasted chopped walnuts
    1/4 c raisins
    1/4 c sundried tomatoes, sliced
    1/4 c fresh cilantro
    1/4 c feta cheese

    For the dressing:
    3 T lemon juice
    1/4 c chopped scallions
    2 T honey
    salt & pepper to taste

Directions

Soak bulgar wheat in 1-1.5c hot water until pliable and chewy. Whisk together lemon juice, honey, 1/4 c scallions and salt and pepper in a medium sized mixing bowl. Add wheat, chopped cucumber, remaining scallions, sundried tomatoes, rasins, toasted walnuts, and fresh cilantro. Toss until coated with vinagrette. Top with feta and serve.
