Ingredients

    1 cup Chickpeas or Butter Beans
    1 cup Green beans, sliced
    1 cup Coconut Milk (Lite)
    1 sachet Thai Green Curry sauce
    Lime juice to taste
    50g cornflour
    1 cup diced soft tofu

    Serve with cooked Basmati Rice.

Directions

Makes 4 main meals.

Cook broccoli and green beans until just tender. (I do mine in a zippy bag in the microwave for a few minutes.) Add canned beans, curry sauce and coconut milk and heat through. Add a bit of water if needed to increase sauce, or add more coconut milk, if you can find the lite variety. Add tofu cubes. Dissolve cornflour in a bit of water to make a fluid paste. Add to pot. Bring to the boil, stirring gently until creamy and thick. Add a squeeze of lime juice and season to taste.

Serve with fragrant rice.
