Ingredients

    2 pork tenderloins, approximately 3/4 of a pound each
    3/4 cup apple juice
    1/2 cup maple syrup
    1/4 cup halved pecans

Directions

Prepare pork tenderloin by removing fat and tough membrane. Place in 7 x 9 glass dish. Add apple juice, saving 2 tablespoons. Put the 1/4 cup maple syrup and 2 tablespoons apple juice in a non-stick frying pan and bring to a boil. When boiling, add pecans and simmer until mixture starts to thicken. Pour over meat. Cook in over at 375 degrees for 40 - 45 mins., basting occasionally. When serving, drizzle some of the juices over the meat. Delicious.

    we grilled this in a pan on the BBQ and served with baked apples sprinkled with brown sugar and cinnamon! delicious! everyone liked it and the 4 yr old had 3 helpings! - 3/16/10
