Ingredients

    1 lb ground turkey
    2 cups frozen corn
    1 cup medium Salsa
    1 can sliced olives
    1 small can enchilada sauce
    8 mushrooms, sliced
    1 bunch green onions, chopped
    1 cup gluten free noodles
    8 oz neufatchel cream cheese
    ½ to 1 cup shredded Mexican cheese blend
    0% Fage greek yogurt


Directions

Brown turkey and season with taco seasoning or your preference of seasonings.

Follow gluten free noodle instructions to prepare noodles.

Add neufatchel cream cheese and enchilada sauce to the ground turkey when browned. Melt together. Add salsa, olives, corn, green onions and mushrooms to turkey and sauce mixture. (You may need to add more enchilada sauce.)

Combine with noodles, place in casserole dish and sprinkle cheese on top.

Bake uncovered at 350 degrees for about 30 minutes or until bubbly and crispy on top. Top with greek yogurt. Makes about 8 1 1/2 cup servings.
