Ingredients

    4 tbsp butter
    3 cups chopped onion
    1 tsp paprika
    1 cup red lentils washed and picked over
    1/2 cup bulgar wheat
    2 tbsp tomato paste
    8 cups stock , beef, chicken, or whatever you have
    1/8 tsp red pepper flakes or to taste
    1 tbsp mint leaves (optional)


Directions

Heat butter and saute on low heat till soft. Add paprika, lentils and bulgar, stock and hot peppers. Bring to a boil and simmer till soft. If using brown rice, it will take about 45 minutes. It will be less if using bulgar, quinoa or white rice. When ready to serve add mint leaves if using.
