Number of Servings: 12

Ingredients

    Dressing: Mix and Marinade for several hours
    1 1/2 Tbl Poppy Seeds
    3/4 Cup White Vinegar
    1 1/2 Cups Vegetable Oil
    3/4 Cup Sugar
    1 1/2 Tbl Grated Onion
    1 1/2 tsp Salt
    3/4 tsp Dijon Mustard

    Salad: Wen ready to serve pour dressing over and mix.
    1 (10oz) Bag of Spinach with stems removed
    1 Med. Head of Iceberg Lettuce
    1 Cup Non-Fat Cottage Cheese
    3/4 lb Swiss or Mozarella Cheese
    1/2 lb. Bacon, cut into 1/2 inch pieces, then cooked
    Before serving add: 3/4 Fresh Mushrooms, sliced
    1 sliced purple onion

Directions

1- Mix together in a pour spout bottle the Dressing ingredients. Put in the fridge for several hours.
2- Cook Bacon according to package directions. (To reduce Fat and Calories Bacon can be subsituted for Baco Bits or Turkey Bacon). Drain fat and allow to cool before adding to salad.
3- Combine Spinach, Lettuce, cottage cheese and Swiss or Mozarella Cheese and Bacon, Toss together.
4- To finish before serving toss in Salad Dressing and mushrooms and top with Purple Onions.
