Ingredients

2 Tbs grapeseed oil
2 cups broccoli
1 small avocado
1 yellow onion
4.5 cups vegetable broth (yeast-free)
1 cup coconut cream
Celtic Sea Salt to taste
Some cumin, basil, fresh cilantro or your favorite spices to taste
Directions
For a lower fat, lower calories alternative, ommit the coconut cream and reduce the vegetable broth to 2 cups. The coconut cream adds 158 calories, 16.6 grams fat, and 1.74 g protein. I made it without cocunut cream and it was still creamy and yummy.
Chop onion. Peel and chop broccoli stocks into small pieces. In soup pot, heat oil to medium low, gently saute onion and broccoli stocks for 5 minutes. Add vegetable broth and broccoli florets and let simmer on low for 15 minutes. Remove from heat, letting soup coo. In blender, puree half of the soup mixture. Pour back into soup pot and mix. Gently stir in coconut cram until mixed thoroughly. Add spices and diced avocado. Serve warm. Serves 5.
