Ingredients

    3 eggs, separated
    1 1/2 cups whole wheat flour
    1 cup white flour
    1/2 cup oatmeal
    3 tsp baking powder
    1/2 tsp salt
    2 tsp brown sugar
    1/4 cup nonfat, sugar free vanilla yogurt
    1/4 cup olive oil
    3 cups skim milk

Directions

Beat egg whites until stiff.
Combine all dry ingredients in medium bowl.
Beat in wet ingredients.
Lightly fold in egg whites.
Cook in a lightly greased waffle iron until golden brown.

1/3 cup batte per waffle
2 waffles per serving

    Very tasty! I made these for Mother's Day brunch and got rave reviews. No one would have known they were "healthy." I have a large restaurant-style belgian waffle maker and it needed almost a full cup of batter per waffle, but we still got plenty of waffles from this recipe. Yum! - 5/11/08
