Ingredients

~1 pound snapper (3 fillets)
1 tbsp brummel and brown
2 tbsp greek basil
2 tbsp olive oil
5 cloves garlic, crushed
~1 tsp salt
3/4 10-oz bag mixed peppers (frozen)
Directions
In saute pan, heat frozen peppers w/~1 clove garlic. Cook until heated through.
Mix remaining garlic, brummel and brown, and basil in separate bowl.
Place snapper in baking dish. Pour olive oil and salt on fillets. Top with butter mixture.
Bake snapper in oven ~15 mins. Then top with 8-oz of the mixed peppers (remaining peppers can be put on top as well, but this will change NI. I saved mine for the mashed potatoes I was making). Continue cooking ~10-15 mins, or until cooked through.
Serve with rice, quinoa, or mashed potatoes. I served with potatoes and mixed the remaining 2 oz of peppers into the potatoes.
