Introduction
Applesauce can be substituted for some of the oil to reduce fat and add fruit. Flax meal, nuts, seeds, and or raisins can also be added (Remember to add additional calories). Canned cream cheese frosting can be omitted to save about 85 calories per serving. Ingredients

1/2 CUP Splenda blend for baking
3/4CUP Smart Balance Omega cooking oil
2 Egglands Best cage free eggs
1CUP white 100% whole wheat flour (KING ARTHUR)
1 teaspoon Cinnamon
1teaspoon Baking Soda
1teaspoon Sea Salt
1CUP Freshly shredded carrots
1Can (16 oz) Cream Cheese Frosting
Directions
Preheat oven 350* Grease 13X9 pan
With electric mixer on medium, beat sugar, oil, and eggs until light. Stir in flour, baking soda, salt, and cinnamon until well combined. Gently stir carrots into batter. Poor into pan. BAKE 25-30 MINUTES, until toothpick inserted in center of bars comes out clean. Cool completely, then frost.
