Introduction

Ingredients

3 cups whole wheat flour
3/4 cup sugar
3/4 cup packed brown sugar
1 teaspoon salt
4 teaspoons baking powder
2/3 cup applesauce
2 eggs
2/3 cup skim milk
3 cups fresh blueberries
Directions
1. Preheat oven to 400 degrees and grease muffin cups or line with muffin liners.
2. Combine flour, all sugar, salt, and baking powder.
3. Place 1/3 cup applesauce into a 1 cup measuring cup; add the egg and enough milk to fill the cup (about 1/3 cup). Put this into flour mixture and do it again (twice to get 2/3 cup of applesauce and milk and 2 eggs).
4. Mix together but be careful to not stir too much!
5. Fold in blueberries and fill muffins almost to the top.
6. Bake for 20-25 minutes.
Should yield 21 muffins. Remember to put water in any extra muffin cups that don't have batter so everything cooks evenly. :)
