Ingredients

    Whole Wheat Flour, 1 cup
    Baking Powder, 3 tsp
    Baking Soda, 1.5 tsp
    Granulated Sugar, 0.2 cup
    Better 'n' Eggs egg substitute, 0.25 cup
    Vanilla Extract, 0.5 tsp
    Yogurt, Stonyfield Farm fat free plain (6 oz), 0.5 cup
    Salt, 0.25 tsp
    Banana, fresh, 1 medium (7" to 7-7/8" long) (remove)
    Blueberries, fresh, 0.4 cup (remove)

Directions

(based on the Banana Muffin w Yogurt recipe)
Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
Mix together flour, baking powder, baking soda and salt. In a separate bowl, beat together banana, blueberries, sugar, egg and vanilla. Stir in the yogurt . Stir banana mixture into flour until just combined. Scoop batter into prepared muffin cups.
Bake in preheated oven for 15 to 20 minutes, or until a toothpick inserted into center of a muffin comes out clean. Let cool before serving.

    Very Good
    I divided the dough between 12 regular tins. They weren't great big muffins. But I know each one had 100 cal. The taste good too. I added a little fresh nutmeg too. - 2/23/16

    If you're going to make 12 muffins be prepared to use mini-muffin tins. This is half the amount of ingredients of most 12 muffin recipes! - 9/18/10
