Introduction

I forgot to take something out for dinner one night and when I looked in the fridge all I could find were two turkey sausages about the size of Italian sausages, and this is what I came up with. My hubby and I had a piece with a salad for supper and the following morning finished it for breakfast. I forgot to take something out for dinner one night and when I looked in the fridge all I could find were two turkey sausages about the size of Italian sausages, and this is what I came up with. My hubby and I had a piece with a salad for supper and the following morning finished it for breakfast.

Ingredients

    2 Turkey sausages sliced thinly
    4 green onions chopped
    1 cup shredded cheddar cheese
    1 small can creamed corn
    1 large can mushrooms (reserve 1/4 c juice}
    1/4 c heart smart bisquick
    4 large eggs
    salt and pepper to taste

Directions

place sausage slices in bottom of a greased 8 x 8 pan, sprinkle 2/3 onions and 2/3 cheese over sausage. Beat eggs, 2/3 corn reserved mushroom juice and bisquick together and pour over sausage mixture. Sprinkle nremaining corn, cheese and onion on top and lastly place mushrooms on the very top.

Place in a Preheated oven for 40 - 45 min.
Makes 4 servings
