Introduction

Love these little bowls, and thought I'd like to make my own. Love these little bowls, and thought I'd like to make my own.
Number of Servings: 1

Ingredients

    Brown Rice, short/medium grain, 1/2 cup
    Black beans, 1/2 cup
    Chicken, chunked in can, 1/3 of 12.5 oz can
    1/4 of medium tomato, chunked
    1 tbsp red onion
    1/4 cup salsa
    2 tbsp cilantro
    (last three ingredients to taste)
    You can also add low fat sour cream or plain yogurt and/or avocado as desired (not included in calorie counts)

Directions

Cook rice and cool. Add in layers in bowl: rice, beans, chicken, tomato, onion, salsa and cilantro. Make rice in large batches so that the prep time is only 10 minutes. Enjoy!
