Ingredients

    2lb red potatoes unpeeled
    vegetable oil for brushing grill grate
    5 slices lean bacon
    1/4 cup olive oil
    1/4 cup red or white wine vinegar
    2 teaspoons Dijon mustard
    2 tablespoons chopped dill pickle
    salt and fresh ground pepper
    1 cup chopped red pepper
    1 small red onion



Directions

Parboil potatoes for 5 to 7 minutes drain and pat dry.
brush grill grate with vegetable oil and place parboiled potatoes on grill for 15 to 20 minutes on medium-high heat until tender. Cook bacon, allow to cool and drain fat. Cut potatoes in to slices or chunks discarding any loose skin. Whisk together olive oil, vinegar, mustard, pickle, and salt/pepper to taste. In a large serving bowl toss the warm potatoes, bell pepper, and onion with the olive oil mixture until all ingredients are evenly coated. Let stand for up to 30 minutes. Crumble bacon over the top, serve at room temperature.
