A soup my 3 year old will eat! A soup my 3 year old will eat!
Number of Servings: 4


    4 cans swansons 99% fat free chicken broth
    2 cups low sodium V8
    5 pre-cooked chicken tenders,sliced
    1 cup sliced bok choy
    1 cup sliced carrots
    1 can water chestnuts,sliced
    1/2 tsp olive oil
    1/2 cup sliced onion
    1 clove minced garlic
    1/2 tsp sage
    1/4 tsp cayenne pepper
    1 small sprig rosemary or 1/2 tsp dried
    salt and pepper to taste
    Parmesean cheese
    Crusty bread


Saute garlic and onion in oil until soft then add veggie and saute a couple mins. Add broth, V8 and spices and simmer over md low heat until carrots are soft, about 30 mins. Serve with a couple sprinkles of parmesean cheese and a chunk of crusty bread.
