Introduction

This is good when you have leftover Turkey from a Turkey Dinner. I boil the Carcass from a Jenny-O Turkey Breast and discard the bones and skin. Save the meat for the soup, refrigerate. Then I put the broth in a container and refrigerate overnight. Skim off the fat the next day. This is my Turkey Broth. I had issues with SP ingredient list so I put in 99% chicken broth instead for my ingredient list. I think its the same amout of calories ??? Ingredients

    2 Quarts Turkey Broth 99% fat free (4 cans)
    2 Cups Diced leftover roasted Turkey Breast
    1 15 oz Can Black Beans Drain and rinse
    1 10 oz Can Tomatoes & Green chiles
    1/4 Cup Roasted & peeled Green Chiles diced.
    2 cloves garlic or to taste
    3/4 C. fresh Red Bell Pepper
    1/4 Cup diced Celery
    1 C. Frozen Sweet Corn
    1 T Cilantro or to taste (optional)
    1 tsp Chili Powder (optional) or more to taste
    2 tsp Salt or to taste
    1 tsp black Pepper or to taste


Directions

Put the broth in a big stock pot. Add all the ingredients and simmer until the veggies are done. I like my vegetables el dente.
The Prep time and cooking time is approx. If you make your own Turkey Broth it is a longer Prep time.
If you add toppings be sure to count your calories

    Very Good
    I made this with red onion instead of celery and added cumin in place of cilantro. It was awesome! Sure to warm you up on a rainy day. - 10/26/09
