Ingredients

    Egg, fresh, 1 large
    Flour, white, 2 cup
    Granulated Sugar, .5 cup (i actually use evaporated cane juice or sugar-in-the-raw)
    Butter, salted, .5 stick (you can try substituting here with a dairy-free option)
    Applesauce, sweetened, .5 cup
    Baking Powder, 1 tsp
    Baking Soda, 1 tsp
    Cinnamon, ground, 1 tbsp
    Pumpkin, canned, 1 small can

    optional ingredients (not added into calorie count) -walnuts, raisins, chocolate chips.

Directions

Pre-heat oven to 350
1. Cream together egg, applesauce, sugar and butter.
2. sift dry ingredients together and mix with sugar mixture
3. add 1 can of pumpkin and mix well
4. Drop cookie mix onto a greased cookie sheet by about 2 tbsp.
5. Bake for about 20 minutes, checking after 10 and 15 minutes, until toothpick into center of cookie comes out clean.

These cookies are very very soft, like cake, and this batter can be made into muffins or pumpkin bread.

    I tried this recipe and it just didn't work for me. followed the recipe exactly as listed and the mixture was not firm enough for cookies so i figured I would make muffins. the muffins were dry, bland and kind of rubbery - 9/29/13
