Ingredients

    1 tsp saffron
    2 c. rice (jasmine works well)
    1/2 small can Del Monte Petite Cut Diced Tomatoes
    1/2 jalapeno pepper, chopped
    1/4 c. raw onion, chopped (green or red are nice)
    1 tsp cilantro
    1 tsp cumin

Directions

Bring 2 cups water to rolling boil; add rice. When rice has boiled for 10 minutes (when using jasmine rice), add 1 tsp saffron threads, lightly crushed. Stir. When rice has finished boiling, add 1/2 small can Del Monte Petite Cut Diced tomatoes, 1/2 chopped jalapeno pepper (or more, depending on taste), 1/4 cup chopped raw onion, 1 tsp cilantro, and 1 tsp cumin. Leave on burner on low to keep rice warm. Makes 6 1/2 cup servings.
