Introduction

These are really yummy for breakfast or a snack. I make them in small silcone muffin pans so I get 36 muffins altogether. I freeze them in Ziploc vacuum bags in groups of four for me and my son. Take them out the night before and warm them in the microwave in the morning. Just like fresh muffins!! These are really yummy for breakfast or a snack. Ingredients

    1-1/4 cups all-purpose unbleached flour
    1 cup quick-cooking oats
    1/2 cup packed brown sugar
    2 tsp baking powder
    1/2 tsp salt
    1/2 tsp cinnamon
    1/4 tsp baking soda
    1/4 tsp ground nutmeg
    1 egg, lightly beaten
    1 cup vanilla lowfat yougurt
    1 Tbsp orange zest
    Juice from 1/2 large navel orange
    1/4 cup canola oil/butter spread melted
    1 cup Oceanspray craisins
    1/2 chopped walnuts

Directions

Makes 18 small muffins
1. In a large bowl, combine the first eight ingredients. Combine the egg, yogurt, orange zest, orange juice, and melted butter spread; stir into dry ingredients just until moistened. Fold in craisins and nuts.
2. Coat muffin cups with cooking spray; fill three-fourths full with batter. Bake at 375 degrees for 18-20 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from pan.
3. ENJOY!! YUM!!!!
