These sandwiches have become our hamburgers. They are incredibly filling. We usually serve these on ciabatta bread, but you can serve them on any good hard bread. Ingredients

    2 zucchini squash, sliced lengthwise
    2 yellow squash, sliced lengthwise
    2 onion, cut in large pieces
    1 tbs olive oil
    1 tsp fat fee mayonnaise per sandwich

Directions

lightly coat the vegetables with olive oil. Grill until soft. Serve on ciabatta bread with mayonnaise. There is enough veggies to make 10 servings.
