Ingredients

1 packet italian sausage tortellini
1 tin tomatoes, chopped
1 carrot
1/2 yellow/red pepper diced, sliced
1/2 green pepper diced/sliced
1 fresh tomato chopped
1 clove garlic, crushed
1 carrot, chopped
2 tbsp sweetcorn
2 tsp italian herbs
pepper to taste
Directions
*Prepare all the veg so its all ready to put in the saucepan
*fill a saucepan of water to boil ready for the tortellini
*In another pan, pour in the tinned tomatoes, add the carrot, pepper and seasoning. Make sure the carrot is small chunks so it will cook through.
* bring to the boil, add in the clove of garlic, peppers and sweetcorn. Feel free to add in any other veg that you fancy.
*taste, and add more pepper/herbs/garlic to taste
*cook the sauce out a bit, and when the veg is fairly soft, (about 3 min to go) add the tortellini to the boiling water.
* cook the tortellini for about 3 minutes, or until the pasta is nice and soft ( the ends of the tortellini start to seperate)
* add the cooked tortellini to the sauce, mix up and serve
*serves 2 as a large meal, or 4 as a small depending on the sauce quantity.
