Ingredients

    2 cups Rice (pre-cooked/leftovers)
    1 cup Black Beans (pre-cooked/leftovers)
    2 cloves Garlic minced
    ½ cup Onion diced
    ¼ cup Sweet Peppers diced
    ¼ cup Celery diced
    Cilantro
    Salsa Lizano
    Tabasco

Directions

Saute garlic, onion, sweet peppers and celery in a large skillet. Add beans (with a little of the bean broth) and stir until thoroughly heated. Smash a few of the beans for a thicker consistency. Add cooked rice and stir until thoroughly heated. Add Salsa Lizano and Tabasco to taste and garnish with fresh chopped cilantro just before serving.

Serves 6

Note: If you can't find Salsa Lizano, Pick-A-Pepper is a good substitute. You can also dice in a little cooked ham or bacon, but this will change the nutritional value.

Real Gallo pinto doesn't have Tabasco in it. Costa Rican food is not spicy - 6/27/21

I haven't made this yet, but I ate it every morning while I was in Costa Rica in August 2014. I ate it with watermelon and pineapples on the side. - 2/20/15
