I edited this recipe to make it healthier for my family. It's simple and even better the next day. I edited this recipe to make it healthier for my family. It's simple and even better the next day.
Number of Servings: 10


    1 1/2 lbs. Ground turkey
    1 medium onion, chopped
    1/2 tsp. fresh garlic, chopped
    1 can Healthy Choice Cream of Mushroom Soup
    1 can Enchilada Sauce
    1 (15 oz) can RANCH STYLE BEANS
    1 large bag Nacho Cheese Doritos
    1 Large bag Low Fat Mexican Blend Cheese


Brown meat with chopped onion & garlic. Add soup, enchilada sauce, beans & mix; heat until bubbly & heated through. Layer as follows in a 9 x 13 or casserole dish: Doritos, slightly crushed (just enough to cover bottom of pan, 1/2 of the meat mixture, 1/2 of the cheese, then repeat the layer, ending with the remainder of the cheese. Bake at 350 degrees for about 20 minutes. Let rest for 5 to 10 minutes before cutting.

  • I ate this for lunch today & it was very good. I could not find Ranch Beans so I used pinto beans & I used Baked Doritos for fewer calories. Overall a good meal. - 6/29/09

    I am so glad you enjoyed the recipe. Here is a link to info on Ranch Style Beans
    s/; they have spices that will add to the flavor. Since I do not know where you live they may not be available to you. Good luck in locating them.
