Introduction

Simple chickpea salad wrapped in a whole wheat tortilla. Easy to make the day before and pack for lunch.
Great for summer- no heating involved. Serve with a spinach salad or a bowl of steamed broccoli.

Ingredients

    1 15oz can garbanzo beans
    3 Tbsp veganaise
    1 tsp celery seed
    1/2 tsp salt (can be omitted)

    4 whole wheat tortillas

Directions

Use a food processor or a potato masher to combine chickpeas and veganaise. Don't overmash or you'll lose the chicken-salad texture.
Mix in the celery seed and salt (if using).

Place 4 tortillas on your work space, and divide the mixture among them. Roll up and serve, or refrigerate for later.
