Introduction

This hearty casserole is reminiscent of a rich meatloaf with gravy and mashed potatoes, but has none of the carbs associated with it. I like to use fresh spinach and add extra for more fiber and flavor. Ingredients

    1 1/2 lbs ground turkey or chicken
    1/2 onion, chopped
    1 one pound bag of frozen spinach, thawed and water squeezed out or equivalent of fresh leaves
    1 14.5 ounce can of Mexican-style tomatoes
    shredded cheddar
    8 oz plain cream cheese

Directions

Preheat oven to 350 degrees.

Brown and crumble meat in a large skillet. When almost done, add onions and continue cooking until translucent.

Add the spinach to the meat mixture and coo for a few minutes more. Salt to taste. Stir in the cream cheese and tomatoes.

Spray a two quart casserole dish with nonstick cooking spray and top with shredded cheese.

Bake for 20 minutes.

4-6 servings (we make it six servings, as it's rather rich and high in calories and fat).
