Introduction

Number of Servings: 12

Ingredients

    1 cup boiling water
    1 cup chopped dates
    1 tablespoon butter
    1/2 cup sugar
    1 egg
    1 teaspoon bicarbonate of soda
    1 cup white self-raising flour
    1 cup wholemeal self-raising flour

Directions

1. Preheat oven to 180deg Celsius
2. Prepare a loaf pan (I use silicon paper so I don't need extra butter)
3. Soak dates in boiling water
4. Cream butter and sugar
5. Beat egg and add slowly to butter and sugar, beating well.
6. Add soda to date mixture ten stir into creamed mixture
7. Stir in sifted flours until well mixed.
8. Place into prepared tin and bake for 30 minutes in the centre of a moderate oven.

I slice into 12 slices, and then cut each in half.
