Ingredients

1/2 C all-purpose flour
6 Tbsp unsweetened cocoa powder
1 C sugar substitute (or equiv to one cup regular sugar)
1/8 tsp salt
2 Tbsp vegetable oil
1/2 tsp vanilla extract
1 jar pureed prune baby food (4 oz)
2 eggs (for less cholesterol use 1/2 cup egg substitute like EggBeaters)
Directions
Preheat oven to 350 degrees.
Grease (use cooking spray) an 8x8 inch square pan.
In a medium bowl, stir together flour, cocoa, sugar, and salt. Pour in oil, vanilla, prunes, and eggs. Mix until everything is well blended.
Spread batter evenly into prepared pan.
Bake for 30 mins or until top is shiny and inserted toothpick comes out clean.
