Ingredients



    * Sweet potato, cooked, baked in skin, without salt, .5 medium (2" dia, 5" long, raw) (remove)
    * Beans, black, .5 cup (remove)
    * Garlic, 2 clove (remove)
    * *Peppers, sweet, red, fresh, .5 cup, sliced (remove)
    * Basil, 1 tbsp (remove)
    * Corn Tortillas, 4 tortilla, medium (approx 6" dia) (remove)
    * *Philadelphia Light cream cheese, 4 tbsp (remove)

Directions

Microwave sweet potato by first piercing all over with a fork. mic for 5-6 mins on high

add peppers to pan on medium heat with oil.

add garlic, basil and beans (drain and rinse beans first to remove excess salt if it was packaged in it) * i also added a little flacked chili pepper.

remove potato from microwave. cut in half lengthwise. use only one half.

scoop out potato and add to pan.

stir together well.

warm tortillas in microwave for 30 seconds. spread 1 tbsp of cream cheese to each tortilla.

scoop 1/4 of bean and potato mix onto each tortilla.

makes 2 servings of 2 burritos
