Introduction

Quick and simple lunch dish. Quick and simple lunch dish.
Number of Servings: 2

Ingredients

    1 cup leftover rice
    1/2 small onion, chopped
    1/4 can pineapple, small pieces
    1/4 cup ham, cut into thin strips
    1/2 chopped scallions
    1 egg
    1/2 tbsp olive oil
    1 tbsp sesame ginger marinade

Directions

Saute onions in olive oil, gradually add ham, pineapple and lastly scallions. Add the sesame ginger marinade and let it all simmer for 2-3 minutes. Set the contents of the frying pan aside. Heat up the rice on that same frying pan. Once the rice is all separated and quite warm pour one well beaten egg over it and scramble it with rice until thoroughly cooked. Once the rice and egg seem dry add the previously prepared pineapple/ham/veggies and stir.
Makes 2 about 1cup servings.
