Introduction

Wheat free and vegan. Wheat free and vegan.
Number of Servings: 50

Ingredients

    2 cups oats
    1 cup brown rice flour
    1/2 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp salt
    1 tsp cinnamon
    1/2 cup shelled walnut halves
    1/2 cup cocoa nibs

    3 TB flaxseed
    3 TB water
    1/2 cup applesauce
    1/4 cup water
    1/4 cup maple syrup or brown rice syrup
    1 tsp vanilla

Directions

Mix flaxseed and water in small bowl. Mix dry ingredients in separate bowl. Mix wet ingredients into flaxseed bowl. Combine and stir till mixed. Drop by teaspoons onto baking sheet and bake at 350* for 10-15 minutes. Makes 50 cookies. (2 cookie sheets 4 rows of 5 cookies)

    Make sure you smash each cookie down before you bake it. Mine turned out as little balls because I didn't do this :) - 7/29/09
