Ingredients

8 chicken thighs
1 cup chopped onions
1 cup chopped carrots
2 cans mushroom soup, reduced fat
1/2 can evaporated milk, reduced fat
4 tbsp fresh parsley
1 cup chopped fresh mushrooms (optional)
Directions
Makes 4 servings of 2 chicken thighs each.
Chop onion, carrots (and mushrooms if desired) then combine all ingredients in a slow cooker, turn on for 6 hours on low or 3 hours on hight, or put this in a casserole dish in the oven at 375C for 35mins. Serve with brown rice (make sure you put this on first as it takes 45min to cook brown rice on the stove). For sides try steamed string beans or broccoli with garlic. Enjoy!

made it in the slow cooker, all like in the recipe, I just added a bit celery and used skinless boneless thighs . I came home the House smelled good but when I tasted the food, it was tasteless and looked not so appetizing. After major adjustments it was edible. Sorry I am not sure what I did wrong - 3/3/10
