Ingredients

    4 small red potatoes
    1/3 pound fresh green beans, trimmed
    One 12 oz. can chunk light tuna, packed in water, drained
    1/2 c. pitted Greek or Spanish olives
    1/4 c. diced red onion
    2 medium tomatoes, seeded and diced (about 2 cups)
    5 cups chopped romaine lettuce
    2 tbsp olive oil
    1 tsp Dijon mustard
    Salt & freshly ground pepper

Directions

Steam the potatoes until tender. Let cool. Peel and dice.
Steam the green beans until just tender. Set aside.
Toss together the tuna, tomatoes, olives, onion, and romaine. Add the potatoes and the green beans.

Mix the olive oil, lemon juice, and mustard. Season to taste.

Pour dressing over the salad and toss well.
