Introduction

Ingredients

    1 cup uncooked instant brown rice
    1 cup canned black beans, rinsed and drained.
    2 tbsp choppe fresh cilantro
    1oz of reduced fat monterey jack cheese shredded or diced
    1 tsp of chili powder
    1tsp ground cummin.


Directions

In a microwave safe bowl, combine rice and 1 cup water. Cover with plastic wrap and microwave on high for 5 minutes. Remove from microwave and let stand for five minutes.

Add remaining ingredients and toss to combine.

Makes one serving.
