Ingredients



    * Scallions, raw, 2 tbsp chopped (remove)
    * Red Potato, 250 grams (remove)
    * Pepper, black, 1 dash (remove)
    * Egg substitute, liquid (Egg Beaters), 1 cup (remove)
    * Egg, fresh, 2 large (remove)
    * Cheddar or Colby Cheese, Low Fat, 2 oz (remove)
    * Milk, nonfat, .1 cup (remove)
    * *Hormel Bacon Bits, 2 tbsp (remove)

Directions

Chopped scallions and potatoes, saute over medium heat until potatoes are browned and tender. Mix eggs, egg beaters and milk together and pour over pour over potatoes, add bacon bits. Cook over medium heat until set, lifting edges to allow liquid to seep under to cook. Divide in half. Serves two.
