This is a delicious, quick Hungry Girl breakfast! This is a delicious, quick Hungry Girl breakfast!

    1/2 cup fat-free liquid egg substitute
    One wedge Laughing Cow light original swiss chess
    1 tbsp. Hormel bacon pieces
    1 tsp. dried minced onion
    1/2 tsp. Dijonnaise


Spray a large microwave-safe mug lightly with nonstick spray. Add egg substitute, cheese wedge, cut into pieces and bacon, minced onion, Dijonnaise and stir. Microwave for about a minute. Stir gently, and then microwave for another 30-45 seconds, until scramble is just set. Stir and enjoy!!

  • I used half a cup of egg white, a thin slice of lactose free cheese,a tablespoon of green onion and a 1/2 teaspoon of Dijon mustard. This is a nice versatile recipe. Next time I might try adding mushrooms.
