Introduction

Based on another recipe from this site, I had some canned corn to use up so I tossed it in place of rice. Based on another recipe from this site, I had some canned corn to use up so I tossed it in place of rice.

Ingredients

    1 Green Bell Pepper
    1/4 Cup Fat Free Cottage Cheese
    3 tsp Salsa
    1/2 cup corn
    1/2 Crushed Fat Free Saltine Cracker (optional)

Directions

Preheat oven to 350. Cut top off pepper, spoon out seeds set hollow pepper aside with "lid." Mix cottage cheese, salsa, and corn, spoon mixture into hollow pepper. Crush saltine cracker and sprinkle over mixture and dust with seasonings if desired. Bake at 350 for about 10 minutes. Makes one stuffed pepper, serves 1-2 if they don't mind sharing!
