Ingredients

    MEATLOAF MIXTURE

    1 lb - 93% Lean Ground Turkey

    1 - 4.25 oz can of chopped black olives

    1/2 cup of cucumber, petite diced

    1/2 cup of tomatoes, petite diced

    2 cloves of roasted garlic

    1 T - italian seasoning blend

    1 tsp - salt

    1 tsp - ground black pepper

    GARNISH & BUN

    4 - 100% Whole Wheat Arnold Sandwich Thins

    4 medium 1/4 inch thick slices of tomato

    1/2 cucumber sliced into rounds

    FETA CHEESE SPREAD

    4 oz - Atheno's reduced fat feta cheese

    2 T - Ken's Light Northern Italian Salad Dressing




Directions

SERVES 4

Preheat the oven to 350 degrees.

In a large mixing bowl combine ground turkey, olives, chopped cucumber, chopped tomato, roasted garlic, italian seasoning & salt and pepper.

Stir vigorously for one minute. This will help the proteins combine and make a less "crumbly" meatloaf without using a binder (which adds calories).

Place mixture in a loaf pan and bake for approximately 40 minutes or until an internal temperature of 170 degrees is reached.

While the meatloaf is cooking combine mix together feta cheese and italian dressing - making a paste like consistency.

When meatloaf has finished cooking take out of the pan and let rest for 3-4 minutes before slicing into 12 equal sized slices.

Spread 2 T of the feta dressing mixture on the top of each bun. Starting with the bottom bun layer slices of cucumber, then 3 slices of meatloaf. Top with a slice of tomato and then top bun.
