Introduction

This is my mom's dish that everyone loves. It has really simple ingredients, but combines to be YUMMY. This is my mom's dish that everyone loves. It has really simple ingredients, but combines to be YUMMY.

Ingredients

    1 lb boneless, skinless chicken breast
    1 pkg Old El Paso taco seasoning
    1 - 10 oz package yellow rice
    1 - 15 oz can black beans
    Low fat cheddar cheese
    Chopped tomato
    Chopped onion

Directions

Thoroughly cook chicken breast. Dice chicken in to bite-sized pieces and add taco seasoning according to package directions.
Cook yellow rice according to package directions. (We always cook it in the microwave.)
Heat black beans.
Once everything has been cooked, create your own dish. My mom always layers everything, but I mix everything in together. You can create many different flavors using different combinations of these ingredients.
