Introduction
This is a great recipe with lots of flavor. Be sure not to put too much fresh basil in there otherwise it gets a little bitter. On the same note, if you want a little more flavor add a little more fresh basil. I had this salad at one of my favorite restaurants. It satisfies both the hunger and the desire for great taste! Ingredients

2 cups fresh spinach
2 oz. part skim mozzarella, cubed
0.5 cup cherry tomatoes, halved
2 tbsp. fresh basil, chopped
2 tbsp. balsamic vinegar reduction
Directions
Combine all ingredients except balsamic vinegar reduction. Toss ingredients together and place on a plate. Drizzle 2 tbsp of balsamic vinegar reduction over mixture and serve!
**To make balsamic vinegar reduction, place 1 cup of balsamic vinegar into a small pan. Place over low heat and simmer until it reduces by half. (1 cup will make 1/2 cup of reduction - you only need 2 tbsp for this recipe so you can reserve the rest of the reduction for later. This reduction also tastes great over ice cream! - Don't believe me? Try it!). If you reduce it too much, you can always mix in a ittle bit of water back to your reduction to thin it up and get the correct consistency.
