Introduction

If you buy deli roasted chicken, as I do, this is a great way to use 1/2 of one of the breasts to make a quick meal. You can increase the amounts to make more servings. Ingredients

    1/2 roasted lemon pepper chicken breast (3-4oz) cubed
    1c low sodium chicken stock
    1/3c frozen peas and carrots
    1 green onion rough chopped
    1/2-1 Tablespoon curry powder
    3 teaspoons corn starch
    1/2c prepared Instant Minute Rice

Directions

Start Minute rice and set aside to firm up. Heat chicken stock in small skillet til warm, add all ingredients except corn starch and rice, and bring to a simmer. Mix corn starch in a tea cup with 1 tablespoon water and add to skillet, stirring constantly until mixture boils and thickens. Taste for seasoning. Place all rice on plate or in a bowl, pour curry mixture over, and enjoy!
