Introduction
This is my own recipe I've made for more than 2 decades, and brings just the right combo of crunchy, creamy, spicy, tangy, and sweet to the palate, which makes it very satisfying. Also I care for only a little egg in my tuna salad; my preferred ratio I couldn't find already on Sparks' recipes.Serve on green salad, on bread, or add to pasta salad. Great for Tuna Melts - firm recipe not sloppy recipe. Or scoop it into a wedge-cut tomato, placed atop a bed of salad greens for a lovely presentation.
Tuna is canned with alot of salt, so adding additional salt is unnecessary. Ingredients

2 (6oz) cans albacore tuna in water
1 hard boiled egg
3 tbsp Kraft Light Mayo (start out with 2tbsp, add 3rd if needed; 3 are included in nutrition info)
1 tsp yellow mustard
4 tbsp Mt. Olive No Sugar Added Sweet Relish (use dill relish if preferred)
1 large apple, I prefer Granny Smith
2 medium stalks celery, finely diced
1/4 cup finely diced onion of your choice (or 1tsp onion powder)
1 tsp garlic powder
1/2 tsp black pepper (or to taste)
Directions
In a small pan cover egg with cold water, heat on medium-high and bring to a boil. After it' s boiling, set the timer for 6 minutes.
While egg cooks, place a colander in the sink and empty into it 2 (6oz) cans of albacore tuna and the relish. Drain extra well, using potato masher to remove all the liquid.
While tuna is draining, add mayo, mustard, spices, celery and onion into a medium-sized mixing bowl. Cool, peel and chop hardboiled egg, and add to bowl. I prefer using an electric blender to evenly mix all the spices. Save the apple for last so it doesn't turn brown: cut unpeeled, washed apple into thin slices and dice into the seasoning mix; blend immediately so all surfaces of apple pieces are covered.
Remove well-drained tuna and relish from the colander. Add to the mixing bowl and blend, breaking up the chunks of tuna. Vary the amount of mayo used to taste; I like mine firm and not sloppy.
Makes 5 servings, each nearly 1/2 cup.
